Heat a little oil in a frying pan over medium heat. Add the diced onion and cook until softened.
Add the steak mince and cook until browned, breaking it apart as it cooks.
Stir in the garlic, soy sauce, sesame oil, corn syrup, pear juice, and spring onions. Simmer for 5 minutes until the mixture becomes glossy and well coated. Set aside.
Arrange the tortilla nachos on a large baking tray.
Top evenly with the beef bulgogi, jalapeños, spring onions, and grated cheddar cheese.
Bake in a preheated oven at 180°C for 8-10 minutes, or until the cheese has melted.
Meanwhile, make the kimchi salsa by combining the tomatoes, kimchi, onion, coriander, and lime juice in a bowl.
Prepare the chilli guacamole by mashing the avocados and mixing with the shallot, red chilli, lime juice, chilli oil, salt, and pepper.
Remove the nachos from the oven and top with the kimchi salsa.
Sprinkle over the crushed seaweed crisps and serve immediately with the chilli guacamole on the side.
