Eva Pau’s Asian Kitchen Series Two premieres on RTÉ One on Wednesday 4th March at 8pm, running weekly for six weeks and sponsored by Lee Kum Kee. The curry sauce is built separately from onions, garlic, ginger and grated apple, thickened with flour and Japanese curry powder, then blended silky‑smooth and seasoned with light and dark soy sauce, Worcestershire, tomato purée and a touch of sugar for that classic sweet‑savory balance. She serves it sliced over steamed Japanese short‑grain rice, with optional Japanese pickles like takuan and beni shoga to cut through the richness.
Teriyaki Salmon with rice and veggies

For the Teriyaki Salmon, Eva leans into classic Japanese home‑style cooking: fillets of salmon are glazed with a glossy mix of soy, sweetness and aromatics to create a sticky, savoury coating that caramelises as it cooks. The salmon is paired with fluffy rice and colourful vegetables, making it an easy one‑plate meal that balances protein, carbs and greens in a way that works for busy family evenings.
Banana Fritters

To finish, Eva makes Banana Fritters, turning simple bananas into a warm, crunchy dessert that feels straight out of an Asian dessert bar. Her batter uses plain flour, cornflour and raising agents to keep the coating light and crisp, with vanilla for aroma, before the fritters are fried until golden and served hot so the fruit inside is soft and caramelised.
