As someone who grew up loving Korean flavours and later discovered a weakness for loaded nachos, this recipe was almost inevitable. I first made these Korean Beef Bulgogi Nachos for a casual get-together with friends, and they quickly became the star of the table.
The sweet and savoury bulgogi beef pairs perfectly with crunchy tortilla chips, while the kimchi salsa adds freshness and a little tangy kick. A dollop of chilli guacamole balances everything out with creamy richness. It is comfort food, party food, and fusion food all in one delicious tray.
Whenever I need an easy sharing dish that feels a little different from the usual, this is the recipe I come back to.

Korean Style Beef Bulgogi Nachos
Ingredients
Method
- Heat a little oil in a frying pan over medium heat. Add the diced onion and cook until softened.
- Add the steak mince and cook until browned, breaking it apart as it cooks.
- Stir in the garlic, soy sauce, sesame oil, corn syrup, pear juice, and spring onions. Simmer for 5 minutes until the mixture becomes glossy and well coated. Set aside.
- Arrange the tortilla nachos on a large baking tray.
- Top evenly with the beef bulgogi, jalapeños, spring onions, and grated cheddar cheese.
- Bake in a preheated oven at 180°C for 8-10 minutes, or until the cheese has melted.
- Meanwhile, make the kimchi salsa by combining the tomatoes, kimchi, onion, coriander, and lime juice in a bowl.
- Prepare the chilli guacamole by mashing the avocados and mixing with the shallot, red chilli, lime juice, chilli oil, salt, and pepper.
- Remove the nachos from the oven and top with the kimchi salsa.
- Sprinkle over the crushed seaweed crisps and serve immediately with the chilli guacamole on the side.
Notes
- Pear juice gives authentic Korean bulgogi flavour, but apple juice works well as a substitute.
- For extra heat, add more chilli oil or sliced fresh chillies.
- Serve immediately after baking to keep the nachos crispy.
- Leftover beef bulgogi can also be used in rice bowls, wraps, or lettuce cups.
